Comfort Food

I just made my favorite comfort food for lunch. I made it for myself, because my kids don't care for it.

It's called Tomato Soup Goop, and my mom made it for me when I was a kid. I'm pretty sure she got it off of the Campbell's Tomato Soup can, but she's a good enough cook that she could've invented it herself.

Here's the recipe (well, as close as I can come to a recipe, since it's just something I learned to cook from watching my mom):

1/4 to 1/2 c. chopped onions
2 T. butter
(1) 10.75 oz. can Campbell's Tomato soup, undiluted
1 T. Worcestershire sauce (more or less to taste)
1 T. sugar (I add 3 packets of Splenda)
Dash black pepper
(1) 8 oz. package seashell noodles, prepared according to package directions & drained

Saute' the onions in the butter until the onions are translucent. Add the tomato soup, Worcestershire, pepper and sugar to the onions and butter and stir well. Turn heat down to low and let it thicken. Pour over hot noodles.

I think the Goop is good right out of the pan, but it gets better the longer it sits so the sauce permeates the noodles.

My husband thinks this is too sweet, but it's just one of those dishes that makes me feel good inside. I always eat it with a slice or two of white bread to sop up the extra sauce. Yum-oh.

I'm game! I'm always looking for a yummy quick meal to try. Gotta remember to add onions to my shopping list...
